  • 80 g confectioners sugar
  • 3 egg yolks
  • 1 tsp vanilla extract (5mL)
  • 1/2 lb all-purpose flour (225g)
  • 1/2 cup unsalted butter (113g, cool & cubed)
  • ¼ tsp salt (1g)
  • 1 tsp matcha powder
  • 80 g confectioners sugar
  • 3 egg yolks
  • 1 tsp vanilla extract (5mL)
  • 1/2 lb plain flour (215g)
  • 1/2 cup unsalted butter (113g, cool & cubed)
  • 2 tbsp powdered strawberries
  • ¼ tsp salt (1g)
  • 3 drops soft pink food coloring
  • 2 tsp powdered strawberries (optional)
  • 1 cup white chocolate chips (200g)
  • 1/2 cup heavy cream (110g, heated)
  • 2 egg whites at room temperature
  • 1 cup unsalted butter (452g, room temperature)
  • 3/4 cups granulated sugar (300g)
  • 1 pinch kosher salt
  • 8 strawberries (hulled and sliced)
  • 1 tbsp lemon juice (15mL)
  • 1/4 cup sugar
  • 1 tbsp light corn syrup
  • 8 oz mascarpone cheese (room temp)
  • 1/4 cup powdered sugar
  • 1/4 cup strawberry reduction
  • 1/2 cup white candy melts
  • 2 tbsp powdered strawberries
  • 2 tbsp matcha powder

Instructions

  1. Cream together confectioners' sugar and butter until fluffy. Add egg yolks and vanilla; mix well.
  2. Combine flour, salt, and matcha; gradually add to wet ingredients to form dough. Chill for 30 minutes.
  3. Preheat oven to 350°F (175°C). Roll out dough in tart pan; bake for 19 minutes until golden. Cool.
  4. Prepare white chocolate ganache by heating cream and pouring over chocolate chips; stir until smooth.
  5. Whip egg whites to soft peaks; gradually add sugar for meringue. Mix in butter until smooth.
  6. Spread ganache in tart shell; top with meringue and sliced strawberries. Drizzle with strawberry reduction.
