Description

S’mores Rolled Rice Krispie Treats are a fun and delicious twist on the classic s’mores dessert, perfect for any occasion. These no-bake treats combine the crispy goodness of rice cereal with gooey vegan marshmallows and rich chocolate, all rolled into a delightful spiral.

  • 4 tablespoons unsalted butter
  • 10 ounces mini vegan marshmallows
  • 6 cups crispy rice cereal
  • ½ cup crushed graham crackers
  • 1 cup mini vegan marshmallows (for filling)
  • ½ cup chocolate spread or melted chocolate
  • 1 cup semi-sweet chocolate chips (for drizzling)
  • 1 tablespoon coconut oil or butter

Instructions

  1. Melt unsalted butter in a nonstick saucepan over medium-low heat. Add mini vegan marshmallows and stir until smooth.
  2. Remove from heat and fold in crispy rice cereal and crushed graham crackers until well combined.
  3. Transfer the mixture onto greased parchment paper and press into a rectangle about ½-inch thick.
  4. Spread chocolate layer evenly over the pressed mixture and sprinkle remaining mini vegan marshmallows on top.
  5. Using parchment paper as a guide, roll tightly from one long edge to form a log.
  6. Wrap the log in parchment paper and refrigerate for 30–45 minutes until set.
  7. Melt chocolate chips with coconut oil until smooth and drizzle over the chilled log before slicing into rounds.
