  • 1 1/4 pounds boneless skinless chicken breasts (diced)
  • 1/2 cup pineapple juice
  • 1/3 cup yellow mustard
  • 1/4 cup honey
  • 2 large red bell peppers (diced)
  • 1 large onion (chopped)
  • 1 to 2 tablespoons olive oil (optional)
  • 1 heaping teaspoon chili powder
  • 1/2 teaspoon salt (or taste)
  • 1/2 teaspoon pepper (or to taste)
  • 1/4 teaspoon garlic powder
  • Wooden skewers (soaked for at least 20 minutes prior to grilling)

Instructions

  1. In a mixing bowl, combine pineapple juice, yellow mustard, honey, olive oil (if using), chili powder, salt, pepper, and garlic powder. Whisk until smooth.
  2. Add diced chicken breasts to the marinade. Toss until well-coated. Cover and let marinate in the fridge for at least 15 minutes.
  3. Thread marinated chicken pieces onto soaked wooden skewers, alternating with pieces of red bell pepper and onion.
  4. Preheat your grill or grill pan over medium-high heat. Lightly grease with oil if needed to prevent sticking.
  5. Place assembled kabobs on the grill. Cook for about 7 minutes total, turning occasionally until chicken is cooked through and has nice char marks.
  6. Remove kabobs from grill. Let rest for a few minutes before serving.
