  • 8 oz linguine pasta
  • 1 lb chicken thighs, cut into strips
  • 1 large carrot
  • 12 oz mushrooms
  • 1 1/2 cups broccoli florets
  • 1/2 red pepper
  • 1 cup chicken broth
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 1 tsp canola oil
  • 3 Tbsp oil
  • 2 Tbsp unsalted butter
  • 3 garlic cloves, grated
  • 1½ tsp ginger, grated
  • 1 tsp corn starch

Instructions

  1. Cook pasta according to package instructions until al dente; drain and keep warm.
  2. In a bowl, whisk together the sauce ingredients: chicken broth, soy sauce, honey, garlic, ginger, and corn starch.
  3. Sauté chicken in a skillet over medium-high heat until fully cooked; remove from skillet.
  4. In the same skillet, sauté vegetables until tender-crisp.
  5. Add garlic and ginger; sauté for one additional minute.
  6. Pour in the sauce mixture and bring to a gentle boil.
  7. Return chicken and pasta to the skillet; toss everything together until well-coated.
  8. Cook until the sauce thickens slightly; serve hot.
