Instructions
- Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
- In a mixing bowl, cream together brown sugar and vegan butter until smooth. Stir in shredded carrots and vanilla extract.
- In a separate bowl, whisk flour, cinnamon, nutmeg, ginger, baking soda, and salt; gradually add to the wet ingredients until just combined.
