  • 4 oz vegan cream cheese
  • 2 cups powdered sugar / icing sugar (or to taste)
  • 1/2 teaspoon vanilla extract
  • orange and green food coloring (optional)
  • 3 tablespoons chopped walnuts (or pecans, optional)

Instructions

  1. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together brown sugar and vegan butter until smooth. Stir in shredded carrots and vanilla extract.
  3. In a separate bowl, whisk flour, cinnamon, nutmeg, ginger, baking soda, and salt; gradually add to the wet ingredients until just combined.
  4. Drop rounded tablespoons of dough onto prepared sheets, leaving space between each cookie.
  5. Bake for about 13 minutes or until edges are lightly golden; allow cooling before serving.
  6. For frosting: In a mixing bowl, beat together vegan cream cheese and vegan block butter until smooth. Gradually add powdered sugar and vanilla extract; mix until creamy.
