Ingredients
- 2 1/4 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 3/4 cup softened butter
- 1 1/2 cups sugar
- 3 eggs
- 1 Madagascar vanilla bean
- 1/2 tsp vanilla paste or pure vanilla extract
- 1 cup milk
- 1 lb softened butter for frosting
- 1 package (3.4 oz) pistachio pudding mix
- 1 tsp pure vanilla extract for frosting
- 5–6 cups powdered sugar for frosting
- 4–6 Tbs milk for frosting
- Chopped pistachios (optional for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream the softened butter and sugar until fluffy; add eggs one at a time.
- Mix in the scraped vanilla bean and vanilla paste.
- Alternately add dry ingredients and milk until just combined.
- Pour batter into greased cake pans and bake for 25–30 minutes.
- Cool completely before frosting with the pistachio pudding-infused buttercream.
