Ingredients
- 20 oz cheese tortellini
- 10 oz cherry tomatoes
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- ¼ – ½ cup chopped basil
- ½ cup extra virgin olive oil
- 2 Tbsp balsamic vinegar
- 3–4 minced garlic cloves
- Italian seasoning

Instructions
- Cook the tortellini in boiling salted water according to package instructions until al dente. Drain using a colander and rinse under cool water.
- While cooling, chop spinach, tomatoes, garlic, and basil.
- In a mixing bowl, combine spinach, tomatoes, mozzarella, basil, and garlic.
- Add cooled tortellini to the bowl and drizzle with olive oil and balsamic vinegar. Season with Italian seasoning, salt, and pepper; toss gently to combine.
- Chill for at least 30 minutes before serving. Drizzle with balsamic glaze if desired.
