Ingredients
- 1/4 cup olive oil
- 1/4 cup fresh lime juice
- 3 tablespoons brown sugar
- 1 tablespoon Sriracha
- 2 cloves garlic, finely minced
- 1 small Thai chile, minced
- 1 teaspoon coarse salt
- 1/4 teaspoon black pepper
- 1 & 1/2 pounds large shrimp (peeled and deveined)
- Fresh parsley for garnish
Instructions
- In a large resealable plastic bag, combine olive oil, lime juice, brown sugar, Sriracha, garlic, minced Thai chile, salt, and pepper. Seal the bag and shake to mix well.
- Add the shrimp to the marinade and toss to coat evenly. Seal and refrigerate for at least 30 minutes.
- Preheat your grill to high heat (around 450°F).
- Remove shrimp from the marinade and reserve the marinade for basting. Thread shrimp onto skewers.
- Grill skewers for about 2-3 minutes per side until opaque. Baste with reserved marinade while cooking.
- Serve hot with coconut rice or pineapple cucumber salad.
