Instructions

  1. Prepare the sweet potato by microwaving or roasting until tender. Mash until smooth.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add the egg, vanilla extract, and mashed sweet potato; mix well.
  3. In another bowl, whisk together flour, cinnamon, nutmeg, ginger, baking soda, and salt.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed.
  5. Drop tablespoons of dough onto parchment-lined baking sheets.
  6. Bake at 350°F for 10–12 minutes or until edges are golden and centers are soft.
  7. Cool on the pan for 5 minutes before transferring to a wire rack.
