Ingredients
- 2 cups freeze-dried strawberries (plus extra for topping)
- ½ cup unsalted butter
- 20 oz mini vegan marshmallows (divided)
- 2 teaspoons vanilla extract
- ¼ teaspoon kosher salt
- 6 cups rice cereal
Instructions
- Grease a 9” x 9” baking pan with cooking spray. Crush freeze-dried strawberries and set aside.
- In a large pot over medium-low heat, melt the butter. Once melted, remove from heat and stir in 16 oz of mini marshmallows until fully melted.
- Stir in crushed strawberries, vanilla extract, and salt until combined.
- Add rice cereal to the mixture and stir just until coated. Fold in remaining marshmallows.
- Pour mixture into prepared pan, pressing down evenly with a greased spatula. Top with additional strawberries if desired.
- Allow to cool completely before cutting into squares.
