- 6 to 7 cups powdered sugar (sifted)
- ¼ cup fresh strawberry puree (reduced)
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together the flour, baking powder, salt, and baking soda until well combined.
- In another large mixing bowl, beat the softened butter and granulated sugar using an electric mixer until light and fluffy (about 3-5 minutes).
- Add the egg whites one at a time to the butter mixture, mixing well after each addition. Then add in the vanilla extract.
- In a separate bowl, mix together the whole milk and reduced strawberry puree.
- Gradually add the dry ingredients into the wet mixture while mixing on low speed until fully combined.
- If desired, add pink food coloring until you reach your preferred shade.
- Divide the batter evenly between the prepared pans.
- Bake in preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, let them cool in pans for about 10 minutes before transferring them to a cooling rack to cool completely.
