  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 cup sour cream or yogurt
  • 1/3 cup milk
  • 1 Tbsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cup diced strawberries (fresh or frozen)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a muffin tin with liners or spray with nonstick spray.
  2. In a large bowl, mash ripe bananas until smooth. Add sugar, sour cream (or yogurt), milk, egg, and vanilla extract; whisk until combined.
  3. In another bowl, mix together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture and fold gently until just combined.
  4. Gently fold in diced strawberries.
  5. Fill muffin cups to the top with batter and bake for 5 minutes at 425°F, then reduce heat to 350°F (175°C) and bake for an additional 10-12 minutes until domed and golden.
  6. Cool on a rack before serving.
