Instructions
- Preheat the oven to 425°F (220°C). Line a muffin tin with liners or spray with nonstick spray.
- In a large bowl, mash ripe bananas until smooth. Add sugar, sour cream (or yogurt), milk, egg, and vanilla extract; whisk until combined.
- In another bowl, mix together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture and fold gently until just combined.
- Gently fold in diced strawberries.
- Fill muffin cups to the top with batter and bake for 5 minutes at 425°F, then reduce heat to 350°F (175°C) and bake for an additional 10-12 minutes until domed and golden.
- Cool on a rack before serving.
