Ingredients
- 1 lb ground beef (85% lean)
- 1 lb baby bok choy, washed and halved lengthwise
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp vegetable oil
- 2 tbsp soy sauce
- 2 tbsp mushroom sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 1/2 tsp cornstarch dissolved in 1 tbsp water
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a small bowl, whisk together soy sauce, mushroom sauce, sugar, sesame oil, and cornstarch slurry; set aside.
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add ground beef and cook until browned and crispy at the edges (about 5-6 minutes). Remove from pan and set aside.
- In the same pan, add remaining oil. Sauté ginger and garlic for about 30 seconds until fragrant.
- Toss in bok choy cut side down; sear for about 2 minutes until tender-crisp. Add a splash of water and cover to steam for another minute.
- Return the cooked beef to the pan and pour the prepared sauce over everything.
- Toss continuously for 1-2 minutes until the sauce thickens and coats the ingredients evenly.
- Garnish with chopped green onions before serving.
