Ingredients
- 1 packet (2 1/4 teaspoons) instant yeast
- 1 tablespoon light brown sugar
- 1 1/2 cups warm water (about 110°F)
- 1 tablespoon (14 grams) cooled melted butter or neutral oil
- 3/4 teaspoon fine sea salt
- 4 ¼ cups (540 grams) all-purpose flour
- 6 cups water
- ¼ cup baking soda
- 1 large egg
- 1 tablespoon water
- Pretzel salt or coarse sea salt
Instructions
- In a large mixing bowl, combine instant yeast, light brown sugar, and warm water. Let it sit for 5 minutes until foamy. Add cooled melted butter and fine sea salt, then gradually mix in all-purpose flour until a dough forms.
- Transfer the dough onto a lightly floured surface. Knead for about 5-7 minutes until smooth and elastic. Form into a ball and place in a greased bowl. Cover with a damp cloth and let rise in a warm place for about 1 hour or until doubled in size.
- Preheat your oven to 450°F (232°C) and line baking sheets with parchment paper.
- Punch down the risen dough, divide into small pieces, roll each into ropes about 1-inch thick, and cut these ropes into bite-sized pieces.
- In a saucepan, bring the water to a boil, then carefully stir in baking soda.
- Drop each bite into the boiling solution in batches for about 30 seconds. Remove with a slotted spoon and place on prepared baking sheets.
- In a small bowl, whisk together one egg with one tablespoon of water. Brush this mixture over each pretzel bite.
- Sprinkle pretzel salt over the top of each bite before placing them in the oven. Bake for about 12-15 minutes or until golden brown.
