  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup fresh pineapple (diced)
  • 1 ripe avocado (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 1 jalapeño (finely diced, optional)
  • 1 lime (juiced)
  • 2 cups cooked rice

Instructions

  1. In a medium bowl, combine diced pineapple, avocado, red onion, cilantro, and jalapeño. Add lime juice and a pinch of salt; toss gently and set aside.
  2. Pat the shrimp dry with paper towels. In another bowl, mix shrimp with olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper until coated.
