Ingredients
- 4 salmon fillets (5–6 ounces)
- 2 small sweet potatoes, cut into rounds
- 1 yellow onion, sliced
- 1 red or orange bell pepper, sliced
- 6 tablespoons extra virgin olive oil
- 2 teaspoons chipotle chili powder
- Juice and zest of 1 lime
- 1 cup cilantro, chopped
- Plain Greek yogurt or olive oil mayo (for sauce)
- 1 jalapeño, seeded if desired
- 2–4 cloves garlic, minced or grated, to your taste
- 2 teaspoons smoked paprika
- 2–3 cups kale, spinach or arugula, roughly torn
- 2–3 cups cooked quinoa or brown rice
- Avocado, tortilla chips, feta cheese, for serving
Instructions
- Preheat oven to 425°F.
- On a baking sheet, toss sweet potatoes, onion, and bell pepper in olive oil; season with salt and pepper. Roast for 20 minutes.
- Season salmon fillets with chipotle chili powder, smoked paprika, minced garlic, salt, pepper, and drizzle with olive oil.
- After vegetables roast for 20 minutes, push them to one side of the baking sheet; place salmon on the other side and roast for an additional 10-20 minutes until cooked through.
- Blend sauce ingredients: jalapeño, Greek yogurt (or mayo), lime juice, honey, cilantro until smooth; season with salt.
- Serve salmon atop greens and grains; drizzle generously with sauce.
