- 1 large egg, beaten

- 3/4 cup high quality apricot preserves
- 1/4 cup low sodium soy sauce
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, finely chopped or grated
- 1 inch fresh ginger, grated
- 1/2 – 1 teaspoon red pepper flakes
- 1 bunch asparagus or broccoli, chopped
- 1/4 cup fresh basil leaves
- Sesame seeds and rice
Instructions
- Preheat the oven to 475°F and line a baking sheet with parchment paper.
- In a bowl, mix chicken cubes with beaten egg and black pepper. Dredge in flour until fully coated.
- Arrange chicken on one half of the baking sheet and drizzle with olive oil.
- Bake for 12 minutes, flip the chicken, then add chopped asparagus (or broccoli) seasoned with olive oil, salt, and pepper.
- Bake for another 5 minutes until cooked through.
- For the sauce, combine apricot preserves, soy sauce, balsamic vinegar, garlic, ginger, and red pepper flakes until smooth.
- Pour the sauce over the chicken and return to the oven for an additional 3 minutes.
- Serve over rice topped with fresh basil and sesame seeds.
