  • 1 1/4 cups whole milk
  • 2 large eggs
  • 1/4 cup honey
  • 2 1/4 teaspoons instant yeast
  • 1 1/2 teaspoons fine sea salt
  • 4 3/4 cups bread flour

Instructions

  1. Melt the unsalted butter in a small saucepan. Add warmed milk (about 115-120°F) and mix gently.
  2. In a stand mixer bowl, combine the warm milk mixture with eggs, honey, yeast, and salt. Gradually add half of the bread flour until a rough dough forms.
  3. Knead the dough with a dough hook on medium-low speed, adding the remaining flour until you achieve a soft and slightly tacky dough.
  4. Place the dough in a sprayed bowl covered with plastic wrap and let it rise until doubled (90 minutes to 2 hours).
  5. Deflate the risen dough and divide it into 15 equal pieces, shaping each into tight balls.
  6. Arrange rolls seam-side down in a greased baking pan for the second rise (about an hour).
  7. Preheat oven to 375°F and bake for 20-22 minutes until golden brown.
  8. Melt additional butter mixed with honey for topping; brush over warm rolls and sprinkle with flaky sea salt before serving.
