Description

Raw Carrot Ribbon Salad is a vibrant, refreshing dish that brings together the crispness of carrots and cucumbers, all drizzled with a tangy lemon dressing. This salad is not only quick to prepare—taking just 15 minutes—but also packed with nutrients, making it the perfect addition to any meal or a healthy snack on its own.


Ingredients

  • 4 large carrots, peeled
  • 1 small cucumber, seeded and thinly sliced
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley and mint for garnish

Instructions

  1. Use a vegetable peeler to shave the carrots lengthwise into thin ribbons. Place them in a large mixing bowl.
  2. Add the thinly sliced cucumber to the bowl with the carrot ribbons.
  3. In a small bowl, whisk together olive oil, lemon juice, honey or maple syrup, Dijon mustard, salt, and pepper until well combined.
  4. Pour the dressing over the carrot and cucumber mixture. Toss gently to coat evenly.
  5. Fold in chopped parsley and mint until evenly distributed throughout the salad.
  6. Just before serving, sprinkle with toasted sunflower seeds or pumpkin seeds for added crunch.
