- 1 small cucumber, seeded and thinly sliced

- Fresh parsley and mint for garnish
Instructions
- Use a vegetable peeler to shave the carrots lengthwise into thin ribbons. Place them in a large mixing bowl.
- Add the thinly sliced cucumber to the bowl with the carrot ribbons.
- In a small bowl, whisk together olive oil, lemon juice, honey or maple syrup, Dijon mustard, salt, and pepper until well combined.
- Pour the dressing over the carrot and cucumber mixture. Toss gently to coat evenly.
- Fold in chopped parsley and mint until evenly distributed throughout the salad.
- Just before serving, sprinkle with toasted sunflower seeds or pumpkin seeds for added crunch.
