  • 6 tablespoons shortening or unsalted butter
  • 1 cup granulated sugar
  • 9 cups unbleached all-purpose flour
  • 2 cups hot water
  • 2 eggs, beaten
  • 1 tablespoon salt
  • 1/2 cup softened butter
  • 1/2 cup light brown sugar
  • 3 1/2 cups raspberries
  • 1/3 cup granulated sugar
  • Zest of 1 large lemon
  • 1 1/2 teaspoons cornstarch
  • 4 ounces cream cheese, at room temperature
  • 1/4 cup unsalted butter, at room temperature
  • 1 cup powdered sugar
  • 1 teaspoon lemon zest

Instructions

  1. 1. Activate the yeast by dissolving it in lukewarm water for about five minutes until foamy.
  2. 2. In a stand mixer, combine shortening, sugar, and salt with hot water; mix until combined. Allow to cool to lukewarm.
  3. 3. Stir in 2 cups of flour until smooth, then add the yeast mixture and beaten eggs; mix well.
  4. 4. Gradually add remaining flour; knead until smooth and satiny.
  5. 5. Let the dough rise in a greased bowl until doubled in size (about 30 minutes).
  6. 6. Roll out the dough, spread softened butter, sprinkle brown sugar, and layer raspberries mixed with sugar and cornstarch.
  7. 7. Roll up the dough tightly and cut into two-inch pieces; place in greased baking pan.
  8. 8. Allow rolls to rise again until doubled (about an hour), then bake at 350°F for 25-32 minutes until golden brown.
  9. 9. Mix cream cheese with butter and powdered sugar for frosting; spread over cooled rolls.
