  • 1/2 cup brown sugar
  • 2 large eggs
  • 3 medium ripe bananas (mashed)
  • 2 cups rolled oats
  • 1 cup semisweet chocolate chips
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, peanut butter, white sugar, and brown sugar until fluffy.
  3. Beat in the eggs one at a time, then add the mashed bananas and mix well.
  4. In another bowl, combine rolled oats, flour, baking soda, and salt. Gradually mix into the wet ingredients.
  5. Fold in chocolate chips.
  6. Scoop dough onto the prepared baking sheet leaving space between each scoop.
  7. Bake for about 12 minutes or until edges are lightly browned.
