Ingredients

  • 1 pound penne pasta
  • 2 tablespoons olive oil
  • 2 garlic cloves (minced)
  • 1/2 large red onion (thinly sliced)
  • 1 medium carrot (cut into strips)
  • 1 medium zucchini (sliced)
  • 1 red bell pepper (sliced)
  • 1 bunch asparagus (cut into pieces)
  • 1 cup cherry tomatoes (halved)
  • Fresh basil leaves (chopped)

Instructions

  1. Boil a large pot of water with salt; cook penne pasta until al dente.
  2. In a skillet, heat olive oil over medium heat and sauté garlic, onions, carrot, zucchini, bell pepper, and asparagus until tender.
  3. Stir in cherry tomatoes and remove from heat.
