  • 1 medium onion, diced
  • 2 tablespoons taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 hoagie rolls
  • 4 tablespoons mayonnaise
  • 1 medium tomato, diced
  • 2 tablespoons fresh cilantro, chopped
  • 1 jalapeño, sliced (optional)

Instructions

  1. Heat a skillet over medium-high heat and sauté the diced onion until soft.
  2. Add the ground beef, breaking it apart as it browns. Once cooked through, stir in taco seasoning.
  3. Reduce heat to low and sprinkle cheddar and Monterey Jack cheese over the beef. Cover until melted.
  4. Slice hoagie rolls and toast them in another skillet or under the broiler until golden. Spread mayonnaise on each half.
  5. Assemble sandwiches by spooning cheesy beef onto the bottom roll half and topping with diced tomato, cilantro, and jalapeño if desired.
  6. Close with the top half of the roll, slice in half, and serve hot.
