  • 2 large cabbages
  • 2 pounds ground beef
  • 1 cup Arborio rice
  • 1 onion, finely chopped
  • 1/41/2 cup olive oil
  • 1/4 cup water (or more)
  • 1/2 cup chopped parsley
  • 1 heaping teaspoon dried dill
  • 1 teaspoon salt, or to taste
  • black pepper to taste
  • 56 cups chicken broth or water
  • 3 egg yolks
  • 1/2 cup freshly squeezed lemon juice
  • 2 tablespoons cornstarch

Instructions

  1. Boil salted water in a large pot; add cabbages until leaves soften. Remove and drain.
  2. In a food processor, blend half an onion with parsley; combine with remaining chopped onion, dill, ground beef, rice, olive oil, salt, and pepper in a bowl.
  3. Roll filling in cabbage leaves; place snugly in a pot lined with extra cabbage leaves.
  4. Add broth or water; cover and simmer for 30–45 minutes.
  5. Whisk egg yolks, cornstarch, and lemon juice together; temper with hot broth before stirring into the pot.
  6. Cook gently until the sauce thickens slightly; let rest before serving.
