  • 1 pound bow-tie pasta
  • 13 ounces chicken sausage, diced
  • 1 medium red onion, finely diced
  • 13.75 ounces quartered artichokes, drained
  • 3.8 ounces sliced black olives, drained
  • 1 large green bell pepper, seeded and finely diced
  • 1 pint grape tomatoes, halved
  • 1 cup shredded parmesan cheese
  • 2/3 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 tablespoon dried basil
  • 1 clove garlic, minced

Instructions

  1. Cook the bow-tie pasta according to package instructions until al dente. Immediately drain and shock in ice water to stop cooking.
  2. In a large skillet over medium heat, brown the diced chicken sausage until fully cooked. Drain excess fat.
  3. In a mixing bowl, whisk together olive oil, apple cider vinegar, sugar, salt, dried basil, and minced garlic. Stir in the diced onion.
  4. In a large bowl, combine the cooked pasta, chicken sausage, artichokes, olives, bell pepper, grape tomatoes, and parmesan cheese. Pour the dressing over the mixture and toss to coat evenly.
  5. Serve immediately or refrigerate to enhance flavors before serving.
