  • 1 tablespoon coconut flour
  • Pinch salt
  • 2 egg yolks
  • 1 egg
  • ¼ cup monkfruit blend sweetener
  • 1½ teaspoons vanilla extract
  • 4 tablespoons unsalted butter, melted
  • 1 cup sugar-free chocolate chips, melted (optional)

Instructions

  1. Preheat oven to 375°F and prepare the madeleine pan with melted butter.
  2. Sift almond flour, coconut flour, and salt in a bowl; set aside.
  3. Beat egg yolks and whole egg until fluffy (about 5 minutes).
  4. Mix in monkfruit sweetener and vanilla extract; continue beating until ribbons form (another 5 minutes).
  5. Gently fold dry ingredients into the wet mixture, then incorporate melted butter.
  6. Fill each cavity of the prepared pan with batter and bake for about 10 minutes.
  7. Once baked, cool on a tea towel before transferring to a wire rack.
