  • 12 oz fresh raspberries
  • 2 large fresh mangoes, cubed
  • 1 lb fresh strawberries, cubed
  • 1 lb green grapes, halved
  • 1 lb red grapes, halved
  • 4 cups apple juice
  • 4 pockets original unflavored vegan gelatin
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • Pan spray

Instructions

  1. Prepare the fruits by washing them thoroughly and cutting them into desired shapes.
  2. Lightly spray a bundt pan with pan spray and wipe down the interior.
  3. In a medium bowl, combine 1 cup of apple juice with the vegan gelatin and set aside.
  4. Boil the remaining apple juice with granulated sugar and lemon juice. Pour this mixture over the gelatin in the bowl and whisk until dissolved.
  5. Layer the prepared fruits into the bundt pan in order: raspberries, mangoes, strawberries, green grapes, then red grapes.
  6. Slowly pour the cooled gelatin mixture over the fruits until fully covered.
  7. Refrigerate for 3-4 hours to set before unmolding onto a serving plate.
