  • 6 jalapenos
  • 2 tbsp avocado oil
  • 6 slices diced turkey bacon
  • 16 oz Fiber Gourmet light elbow pasta
  • 1/2 cup whipped cream cheese
  • 1 1/2 cup plain Greek yogurt
  • 1 tsp organic garlic powder
  • 1 tsp organic onion powder
  • Pink salt to taste
  • Cracked black pepper to taste
  • 6 oz shredded cheddar cheese

Instructions

  1. Boil salted water in a large pot. Adjust oven rack to the top position; set the oven to broil.
  2. Toss jalapenos with avocado oil and place on a rimmed baking sheet.
  3. Broil jalapenos for about 10 minutes until skins char; monitor closely.
  4. Cook pasta as per package instructions until al dente; drain and transfer to a mixing bowl.
  5. Stir in whipped cream cheese into the warm pasta until well combined.
  6. Steam broiled jalapenos in a Ziplock bag for about 20 minutes, then peel and chop.
  7. Combine chopped jalapenos with turkey bacon, Greek yogurt, seasonings, and cheddar cheese into the pasta mixture; mix well.
  8. Chill before serving.
