  • 1/2 cup powdered sugar, plus extra for dusting
  • 1/2 cup unsalted butter, softened
  • 1 tsp pure vanilla extract
  • 1/4 cup raspberry jam
  • 1 tsp agar-agar powder

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and powdered sugar until light and fluffy. Add the almond flour, vanilla extract, and agar-agar powder; mix until well combined.
  3. Scoop out about one tablespoon of dough, flatten it slightly in your palm, place half a teaspoon of raspberry jam in the center, and fold the edges over to encase the jam completely.
  4. Roll each filled cookie into a ball shape and space them on the baking sheet.
  5. Bake for 12-15 minutes or until lightly golden. Remove from oven and roll in powdered sugar while still warm.
