- 2 chicken breasts (cut into strips)
- 3 tablespoons jerk seasoning
- 2 cups vegetable stock
- 4 cups dried pasta
- ½ cup heavy cream
- ½ cup grated parmesan cheese
- 3 bell peppers (sliced)
- ½ cup green onions (sliced)
Instructions
- Set your Instant Pot to SAUTE mode and heat vegetable oil.
- Add chicken strips and half of the jerk seasoning; sauté until slightly browned. Stir in minced garlic for an additional minute.
- Layer dried pasta over the chicken, then pour vegetable stock on top.
- Secure the lid, set the vent to SEALING, and cook on MANUAL/PRESSURE COOK for 5 minutes.
- Quickly release steam when finished. Gently stir the pasta; adjust liquid levels if necessary.
- Stir in remaining jerk seasoning, heavy cream, parmesan cheese, and sliced bell peppers. Cover to let steam for a few minutes.
- Before serving, mix in sliced green onions.
