  • 750 ml high-proof lemon juice
  • 4 cups water
  • 3 cups sugar

Instructions

  2. Place the lemon zest into a large glass jar and pour in high-proof lemon juice until covered. Seal and store in a cool, dark place for 7–30 days, shaking occasionally.
  3. After infusion, combine 4 cups of water with 3 cups of sugar in a saucepan over medium heat until dissolved, then cool completely.
  4. Strain the infused liquid to remove lemon peels and mix with the cooled syrup.
  5. Bottle the limoncello in clean glass containers and let rest for at least one week before serving chilled.
