  • 2 tsp sugar (optional if using instant yeast)
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil (divided)
  • 1 jar raspberry preserves
  • 2 cups confectioners' sugar
  • Whole milk (for icing)

Instructions

  1. In a mixing bowl, combine warm water and sugar. Sprinkle yeast on top and let it sit until bubbly (5–10 minutes).
  2. In another bowl, mix bread flour, all-purpose flour, and salt. Create a well; add the yeast mixture and 4 tbsp olive oil. Stir until dough forms.
  3. Knead on a floured surface for 8–10 minutes until smooth. Place in an oiled bowl, cover, and let rise in a warm spot for about 1 hour or until doubled.
  4. Punch down the dough; transfer to a greased baking sheet. Stretch into a rectangle about half an inch thick and make dimples with fingers.
  5. Spoon raspberry preserves into each dimple, cover lightly, and let rise for another 30 minutes.
  6. Preheat oven to 375°F (190°C). Drizzle remaining olive oil over focaccia and bake for about 22 minutes or until golden brown.
  7. Mix confectioners' sugar with milk to desired consistency; drizzle over cooled focaccia before serving.
