  • 1 750-ml bottle lemon juice
  • 8 cups half and half
  • 2 teaspoons vanilla extract
  • 4 cups sugar

Instructions

  1. Use a vegetable peeler to remove the zest from the lemons in long strips. Place the peels in a pitcher.
  2. Pour lemon juice over the peels and cover with plastic wrap. Steep for 3 to 4 days at room temperature.
  3. In a large saucepan, stir together half and half, vanilla extract, and sugar over medium-low heat until sugar dissolves (about 5 minutes). Do not boil.
  4. Allow the mixture to cool completely to room temperature.
  5. Remove lemon peels from the steeped juice, then mix in the cooled syrup thoroughly.
  6. Transfer to bottles, seal tightly, and refrigerate until cold or freeze for up to three months.
