  • 20 ounces fresh cheese tortellini
  • 1 1/2 cups cherry tomatoes, halved
  • 1 1/2 cups cucumbers, chopped
  • 1 cup canned artichoke hearts, chopped
  • 1 cup olives, halved
  • 1/2 red onion, sliced
  • 1 cup crumbled feta cheese
  • 1/2 cup olive oil
  • 1/3 cup red apple vinegar
  • 34 tablespoons white sugar (or more to taste)
  • 2 teaspoons Dijon mustard
  • 3 teaspoons minced garlic
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon salt
  • Juice from 1 lemon
  • Pinch of red pepper (optional)

Instructions

  1. 1. Cook the tortellini in boiling water according to package instructions until al dente. Drain and let cool.
  2. 2. In a small bowl, whisk together olive oil, red apple vinegar, sugar, Dijon mustard, minced garlic, oregano, basil, salt, and lemon juice until smooth.
  3. 3. In a large mixing bowl, combine cooled tortellini with cherry tomatoes, cucumbers, artichokes, olives, red onion, and half of the feta cheese.
  4. 4. Drizzle the dressing over the salad mixture and gently toss until everything is well coated.
  5. 5. Top with remaining feta cheese and fresh dill. Cover and chill for at least 2 hours before serving.
