Ingredients

  • 2 lb boneless, skinless chicken breast
  • 3 bell peppers (any color)
  • 1 onion
  • 2 cups mushrooms
  • 1/3 cup water
  • 1/3 cup vinegar
  • 1/3 cup vegetable oil
  • 5 garlic cloves (minced)
  • 1 tsp thyme
  • 1 tsp Italian seasoning
  • 1 tsp poultry seasoning
  • 1 tsp rosemary
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. In a bowl, combine water, vinegar, vegetable oil, minced garlic, thyme, Italian seasoning, poultry seasoning, rosemary, salt, and black pepper.
  2. Cut chicken into chunks and place in a large Ziploc bag. Pour the marinade over the chicken and seal. Refrigerate for at least 2 hours.
  3. While marinating, chop the bell peppers and onion into chunks.
  4. If using wooden skewers, soak them in water for 30 minutes before grilling.
  5. Preheat your grill to medium-high heat.
  6. Assemble skewers by alternating marinated chicken and vegetables.
  7. Grill kabobs for 15-20 minutes until the chicken is cooked through and juices run clear.
