Ingredients
- 4 large bell peppers
- 2 cups cooked rice (fluffy, long-grain)
- 2 tablespoons olive oil
- 1 medium onion (finely chopped)
- 3 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 1/2 cup kalamata olives (pitted and chopped)
- 1/4 cup fresh parsley (chopped)
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1 cup feta cheese (crumbled)
- 2 tablespoons fresh lemon juice
Instructions
- Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds. Brush the outsides with olive oil and place them upright in a baking dish.
- In a large skillet over medium heat, add olive oil. When hot, sauté chopped onion and minced garlic until the onions turn translucent.
- In a mixing bowl, combine cooked rice, sautéed onion mix, cherry tomatoes, kalamata olives, parsley, oregano, salt, black pepper, crumbled feta cheese, and lemon juice. Stir until well mixed.
- Generously fill each prepared bell pepper with the mixture.
- Bake for about 30–35 minutes until the peppers are tender. Let cool slightly before serving.
