  • 4 large bell peppers
  • 2 cups cooked rice (fluffy, long-grain)
  • 2 tablespoons olive oil
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup kalamata olives (pitted and chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 cup feta cheese (crumbled)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds. Brush the outsides with olive oil and place them upright in a baking dish.
  2. In a large skillet over medium heat, add olive oil. When hot, sauté chopped onion and minced garlic until the onions turn translucent.
  3. In a mixing bowl, combine cooked rice, sautéed onion mix, cherry tomatoes, kalamata olives, parsley, oregano, salt, black pepper, crumbled feta cheese, and lemon juice. Stir until well mixed.
  4. Generously fill each prepared bell pepper with the mixture.
  5. Bake for about 30–35 minutes until the peppers are tender. Let cool slightly before serving.
