  • 1/2 cup softened butter
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 & 1/2 cups all-purpose flour
  • 1 tbsp corn starch
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup fresh blueberries, washed and dried well
  • 11.5 tbsp blueberry jam
  • 3 tbsp butter for streusel
  • 2 tbsp brown sugar for streusel
  • 2 tbsp granulated sugar for streusel
  • 1/3 cup flour for streusel
  • a pinch salt for streusel
  • a pinch cinnamon for streusel

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and creamy. Mix in the egg and vanilla extract until smooth.
  3. Gradually add in the flour, corn starch, baking powder, baking soda, and salt. Fold in the fresh blueberries gently.
  4. Swirl small dollops of blueberry jam into the dough while keeping some visible streaks.
  5. Scoop out equal-sized balls of dough onto the prepared baking sheet and top with streusel (made by combining butter, sugars, flour, salt, and cinnamon).
  6. Bake for 13-14 minutes until lightly golden. Allow cooling on the sheet for about 15-20 minutes before enjoying.
