  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 2 tablespoons all-purpose flour (optional)
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Dice the chicken into bite-sized pieces and set aside. Chop the onion, garlic, carrots, and potatoes.
  2. In a large sauté pan, heat olive oil over medium heat. Sauté the onion and carrots for 3-5 minutes until softened. Add garlic and sauté for an additional 1-2 minutes.
  3. Transfer the sautéed vegetables to the slow cooker. Add diced chicken, corn, and potatoes.
  4. Pour in chicken broth, milk, and heavy cream. Stir well and add seasonings.
  5. Cover and cook on low for about 6 hours until everything is tender.
  6. If desired, thicken the chowder by whisking flour with milk and stirring it in during the last 10-15 minutes of cooking.
