  • 1 ½2 pounds boneless skinless chicken thighs
  • 1 ½ cups matchstick carrots
  • 1 large red bell pepper (sliced)
  • 8 ounces sugar snap peas
  • 3 scallions (chopped)
  • 4 cups low-sodium chicken stock
  • ½ cup soy sauce
  • 2 tablespoons brown sugar
  • 2 packets chicken-flavored instant ramen noodles (keep one seasoning packet)

Instructions

  1. Prepare ingredients by chopping vegetables.
  2. In a slow cooker, add chicken thighs, garlic, carrots, bell pepper, sugar snap peas, and scallions. Pour in chicken stock, soy sauce, and brown sugar; stir well.
  3. Add one flavor packet from the ramen noodles; stir again.
  4. Cover and cook on high for 4 hours or low for 6 hours until chicken is tender.
  5. About 30 minutes before serving, add both packets of dry ramen noodles (without seasoning). Stir occasionally until cooked through.
  6. Serve warm with desired toppings.
