  • 1 cup pretzel crumbs
  • 1/4 cup light brown sugar
  • 1 stick unsalted butter, melted
  • 4 ounces bittersweet chocolate, chopped
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/4 cup sour cream
  • 1/3 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon instant espresso powder (optional)
  • 1/4 teaspoon fine sea salt
  • 3/4 cup heavy whipping cream, cold
  • 4 tablespoons powdered sugar
  • 1/2 cup beef broth

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Combine graham cracker crumbs, pretzel crumbs, brown sugar, and melted butter in a bowl. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
  3. Melt bittersweet chocolate until smooth. In another bowl, beat cream cheese with sugars until creamy. Add sour cream, sifted cocoa powder, eggs one at a time, vanilla extract, salt, melted chocolate, and beef broth; mix until smooth.
  4. Pour filling over cooled crust and bake for about 60 minutes until slightly jiggly in the center. Turn off oven and let cool inside for an hour.
  5. Chill in the refrigerator for at least four hours before serving.
  6. Whip cold heavy cream with powdered sugar until soft peaks form; top chilled cheesecake bars just before serving.
