  • 2 tbsp canola oil
  • 1 large onion (diced)
  • 4 garlic cloves (minced)
  • 2 lbs cherries (pitted and chopped)
  • 8 oz tomato sauce
  • 7 oz chipotle peppers in adobo sauce
  • 1/2 cup dark brown sugar
  • 1/2 cup molasses
  • 1/4 cup apple cider vinegar
  • 1 tbsp ground mustard
  • 1 tsp ground cumin
  • 1 tsp ground pepper
  • 1 tsp smoked paprika
  • 1/2 tsp ground cinnamon

Instructions

  1. Heat canola oil in a heavy-bottomed pot over medium heat. Add diced onion and a pinch of salt; sauté until translucent. Stir in minced garlic and grated ginger for another minute.
  2. Mix in the tomato sauce, chipotle peppers, and chopped cherries. Bring to a low boil while stirring.
  3. Add dark brown sugar, molasses, apple cider vinegar, ground mustard, cumin, smoked paprika, cinnamon, and liquid smoke if desired. Simmer for at least 30 minutes.
  4. Use an immersion blender to puree the sauce until smooth. If too thick, add water or broth to achieve desired consistency.
  5. Serve immediately or cool before storing in airtight jars.
