  • 6 oz Cream cheese (room temperature)
  • 3 TBSP White granulated sugar
  • 1 tsp Pure vanilla extract
  • 3 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1 cup Unsalted butter (melted and cooled)
  • 1 cup Brown sugar (packed light or dark)
  • 1/2 cup White granulated sugar
  • 1 cup Finely grated carrots
  • 2 Large egg yolks (room temperature)
  • 2 oz Cream cheese (room temperature)
  • 2 TBSP Unsalted butter (room temperature)
  • 3/4 cup Powdered sugar (sifted)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, combine melted butter with brown sugar and granulated sugar until smooth. Mix in egg yolks and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. Gradually add this to the wet mixture and fold in grated carrots.
  4. For the cream cheese filling, beat together room temperature cream cheese, unsalted butter, powdered sugar, and vanilla until smooth.
  5. Scoop about two tablespoons of dough, flatten it slightly, place a teaspoon of filling in the center, then fold the dough over to encase it fully.
  6. Bake for 15 minutes until golden around the edges but soft in the center. Allow cooling before serving.
