  • ¼ teaspoon kosher salt
  • 8 tablespoons unsalted butter (cut into cubes and chilled)
  • ¼ cup lemon zest + ½ cup juice (from 4 lemons)
  • 1 large egg + 5 large yolks
  • ⅓ cup honey
  • Kosher salt
  • 4 tablespoons unsalted butter (cut into 4 pieces and chilled)
  • 2 tablespoons heavy cream
  • 10 ounces (2 cups) blueberries
  • 2 tablespoons cornstarch
  • ¼ cup honey

Instructions

  1. For the crust: Combine flour, confectioners' sugar, and salt in a mixing bowl. Add chilled butter and mix until crumbly. Stir in egg yolk, cream, and vanilla. Press into tart pan and chill for 15 minutes before baking at 350°F (175°C) for 20 minutes until golden brown. Let cool.
  2. For the lemon curd: Whisk lemon zest, juice, honey, egg yolks, and whole egg in a saucepan over medium heat until thickened (10-12 minutes). Remove from heat and stir in chilled butter until melted. Pour into cooled crust; refrigerate for 2 hours to set.
  3. For the blueberry filling: Cook blueberries with honey until bursting. Mix cornstarch with water; add to blueberries and stir until thickened. Cool slightly then pour over lemon curd layer.
  4. Chill tart for an additional hour before slicing and serving.
