  • 1 loaf (about 1 pound) bread, crust removed if hard
  • 4 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 4 eggs
  • 2 egg whites
  • 11/2 cups skim milk
  • 1 tablespoon vanilla extract
  • 6 cups strawberries, hulled and thinly sliced
  • 6 tablespoons sugar
  • Pinch salt
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the strawberry topping by combining sliced strawberries, sugar, salt, and lemon juice in a large bowl. Mix gently and set aside for about an hour.
  2. Preheat your oven to 350°F (175°C).
  3. In a large mixing bowl, whisk together eggs, egg whites, sugar, cinnamon, skim milk, and vanilla until smooth.
  4. Tear or cut the bread into bite-sized pieces. Layer half in a greased baking dish and pour half of the egg mixture over it. Repeat with remaining bread and mixture.
  5. Bake for about 45 minutes or until golden brown on top and set in the middle.
  6. Allow to cool slightly before serving topped with strawberry mixture.
