  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 0.5 cup apple butter
  • 0.25 cup brown sugar (or coconut sugar)
  • 0.5 cup flour (all-purpose or whole wheat)
  • 0.25 cup cold butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine flour, baking powder, salt, sugar, and cinnamon.
  3. In another bowl, whisk together milk, vegetable oil, egg, and vanilla until blended.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
  5. Fold in the apple butter.
  6. Spoon batter into muffin tin lined with paper liners until two-thirds full.
  7. Bake for 20–22 minutes or until a toothpick comes out clean.
  8. Allow cooling in the pan for 5 minutes before transferring to a wire rack.
