- 0.25 cup brown sugar (or coconut sugar)
- 0.5 cup flour (all-purpose or whole wheat)
- 0.25 cup cold butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine flour, baking powder, salt, sugar, and cinnamon.
- In another bowl, whisk together milk, vegetable oil, egg, and vanilla until blended.
- Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
- Fold in the apple butter.
- Spoon batter into muffin tin lined with paper liners until two-thirds full.
- Bake for 20–22 minutes or until a toothpick comes out clean.
- Allow cooling in the pan for 5 minutes before transferring to a wire rack.
