  • 2 medium zucchini
  • 2 red bell peppers
  • 1 large red onion
  • 2 cups cherry tomatoes
  • 1 cup Kalamata olives
  • 4 cloves garlic
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • Juice of 1 lemon
  • ½ cup feta cheese (optional)

Instructions

  1. Prepare your ingredients by washing and chopping vegetables.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Season chicken with salt and pepper; cook until golden brown (5–7 minutes per side). Slice into bite-sized pieces.
  4. In the same skillet, stir-fry zucchini, bell peppers, and onion for about 5 minutes until softened yet crisp.
  5. Add garlic, cherry tomatoes, olives, sun-dried tomatoes, and herbs; mix well.
  6. Return chicken to the skillet; squeeze lemon juice over the top and stir to combine.
  7. Serve warm with crumbled feta cheese on top.
