- 1 lb shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 1/4 cup red onion, thinly sliced
- Juice of 2 limes (about 4 tbsp)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season shrimp with salt and pepper. In a skillet over medium heat, heat 1 tablespoon of olive oil. Cook shrimp until pink and opaque, about 3-4 minutes per side. Remove from heat and let cool slightly.
- While shrimp cools, prepare the veggies: dice avocados, halve cherry tomatoes, chop red onion and cilantro.
- In a large bowl, combine diced avocados, cherry tomatoes, red onion, cilantro, and cooled shrimp. Drizzle with remaining olive oil and lime juice.
- Gently toss all ingredients to combine without mashing the avocados. Adjust seasoning as needed.
- Chill in the refrigerator for 15-30 minutes before serving for optimal flavor melding.
- Serve in bowls or plates garnished with extra cilantro.
