  • 1 lb shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 1/4 cup red onion, thinly sliced
  • Juice of 2 limes (about 4 tbsp)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season shrimp with salt and pepper. In a skillet over medium heat, heat 1 tablespoon of olive oil. Cook shrimp until pink and opaque, about 3-4 minutes per side. Remove from heat and let cool slightly.
  2. While shrimp cools, prepare the veggies: dice avocados, halve cherry tomatoes, chop red onion and cilantro.
  3. In a large bowl, combine diced avocados, cherry tomatoes, red onion, cilantro, and cooled shrimp. Drizzle with remaining olive oil and lime juice.
  4. Gently toss all ingredients to combine without mashing the avocados. Adjust seasoning as needed.
  5. Chill in the refrigerator for 15-30 minutes before serving for optimal flavor melding.
  6. Serve in bowls or plates garnished with extra cilantro.
