Ingredients

  • 1/2 watermelon (cubed)
  • 1 English cucumber (sliced)
  • 1 small red onion (chopped)
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh basil leaves
  • 1/2 cup dairy-free feta cheese
  • 1/4 cup olive oil
  • 2.5 tbsp apple cider vinegar
  • 1 tsp maple syrup (optional)
  • pinch of sea salt

Instructions

  1. Cube the watermelon and place it in a large bowl.
  2. Slice the cucumber into half-moons and add to the bowl.
  3. Chop the red onion finely and add it along with chopped mint and basil.
  4. Sprinkle dairy-free feta on top.
  5. In a separate bowl, whisk together olive oil, apple cider vinegar, maple syrup (if using), and salt.
  6. Pour the dressing over the salad just before serving and toss gently.
