  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1 cup bell peppers, diced (mixed colors)
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot of salted boiling water, cook orzo until al dente according to package instructions. Drain and rinse under cold water.
  2. While the orzo cooks, chop the cherry tomatoes, cucumber, red onion, bell peppers, and parsley into bite-sized pieces.
  3. In a bowl or jar, whisk together lemon juice and olive oil until combined.
  4. In a large mixing bowl, mix the cooled orzo with chopped veggies and crumbled feta. Drizzle with dressing and toss gently to coat.
  5. Taste and add salt and pepper as needed.
