Instructions
- In a large pot of salted boiling water, cook orzo until al dente according to package instructions. Drain and rinse under cold water.
- While the orzo cooks, chop the cherry tomatoes, cucumber, red onion, bell peppers, and parsley into bite-sized pieces.
