- 1 cup green or brown lentils
- 2 cups seedless cucumbers, chopped
- 1 cup cherry tomatoes, halved
- ½ red onion, finely diced
- ½ cup fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Rinse lentils under cold water. In a pot, combine lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20–25 minutes until tender. Drain excess water.
- While lentils cook, chop cucumbers, tomatoes, and red onion; add them to a large mixing bowl.
- Add chopped parsley to the veggies.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Combine cooked lentils with the veggie mixture and drizzle dressing over everything. Toss gently to combine.
- Serve immediately or chill in the fridge for an hour before serving.
